Ancient Whole Grains vs. Rice Flours

Most gluten-free baking mixes are white, starchy and full of refined sugars. Not us. Zemas gluten-free baking mixes are full of nutrient dense ancient whole grains, such as teff, quinoa, millet, sorghum and amaranth, plus super seeds chia, hemp and flax. Rice flours are an inexpensive way to fill up a gluten-free baking mix formula with little nutritional gain. Most companies use white rice flour, which has very little nutrition to offer you, or a combination or white and brown rice flours. White rice flour actually starts out as brown rice and then the husk, bran and germ are removed. Much like white flour and whole wheat flour. All that is left is the starch.
