Zemas Gluten-Free Cinnamon Pecan Cupcakes
Zemas Cinnamon Pecan Cupcakes are a delicious dessert for any family night or birthday party.
Cinnamon Pecan Cupcake
  1. Zemas Gluten-Free Cinnamon-Oatmeal Apple Muffin mix
  2. ¼ c. palm sugar (sugar of choice)
  3. 2 eggs (egg replacer)
  4. 4 T. butter, melted (dairy-free or regular)
  5. 6 T. oil of choice (grapeseed, coconut)
  6. ¾ c. milk of choice (almond, rice, coconut, dairy)
  7. 2 t. pure vanilla extract
  8. ¾ c. pecans, chopped
  9. ½ t. baking powder
  10. ¼ t. xanthan gum
Maple Frosting
  1. 1 c. butter, room temperature (diary-free or regular)
  2. 2 c. powdered sugar
  3. 3 T. pure maple syrup
Cinnamon Pecan Cupcake
  1. Preheat oven to 350 degrees and line a muffin tin with cupcake liners.
  2. In a bowl combine Zemas mix, xanthan gum and palm sugar.
  3. In a second bowl whisk together the eggs, butter, grape seed oil, milk and vanilla.
  4. Mix the wet mixture with the dry until thoroughly combined. Fold in pecans.
  5. Bake for 20 minutes, or until toothpick inserted into center comes out clean.
  6. Let cool, then top with Zemas Maple Frosting.
Maple Frosting
  1. Using an electric mixer beat the butter until nice and fluffy, about 2 minutes.
  2. Add in the powdered sugar, 1 cup at a time until the frosting is smooth and creamy.
  3. Mix in the maple syrup on low.
  4. Top cooled cupcakes and enjoy!
  1. Zemas favorite egg replacer is mixing ¼ c. water with 1 T. of chia seeds. Stir and allow to gel (approx. 5 minutes).
